The cool thing about Linux is that you really only need to back up your /home directory. Otherwise it's easier to reinstall and restore your /home than it is to actually back it up. Unless of course you are ding something very specialized with your Ubuntu install - I'm guessing not if it's on a Mini 9.
Most people don't realize that other than setting up the boot loader to tell it you have a Linux distro to boot from and your localization for time zone data, keyboard type and language, the only thing Linux does when you "install" it is copy files from disk to drive.
That being said, backing up your home directory is as easy as setting up a chron job to routinely copy it to another location.
