After I finished Triple booting, I looked for some USB sticks to use and found a 3 pack of Sandisk Facet 8gb sticks (All 3 fit nice in a CF Card Case). I restored the Mac OS X installer and ran NBI on it to create the 1 USB Stick. I found that together both Windows and Ubuntu only total 5gb, and was hoping to fit them on one stick, although from installing GRUB on the stick to other attempts I can't boot into both installers.

I'm really stuck with this one, all help will be appreciated!

Generally there is only one boot sector on a drive. You can have a boot manager that will then select different partitions, but it's not something you'll generally find amenable to USB installers.

With an iso image you can create a bootable USB stick for Ubuntu in Ubuntu, Win or OSX. You probably have already seen this link, Download Ubuntu Desktop | Download | Ubuntu I don't know if you can do the same for Win or OSX let alone putting 2 or all 3 on same bootable USB stick. You might ask on the Ubuntu forum.
