I run Mint, mostly with external screen/keyboard/mouse, and am happy with it.

I dumped OSX off of mine about 6 months ago. Loved it, was just getting too bloaty for the mini. Have been through most of the linux distro's and settled on Crunchbang (#!). As I basically use the mini for quick surfing...speed was the key. It is an older distro and has not been updated in any significant way since Feb of this year. But it is small and fast and highly customizable. I have been really happy with it.

Default Pepermint Linux 3 - 08-16-2013, 04:17 PM

This cloud centric OS is built off of LTS lubuntu but is still faster than lubuntu.
it's super stable now and I have been running it for 6 months +.

Next I will upgrade to 120 Gb SSD with Peppermint.
Peppermint is the perfect combination of functionality with speed.
You can swap out apps with locally hosted and cloud app with no problem.

peppermint 3 is built from 12.04 LTS and uses LXDE. It's fast stable and the best OS I have found for the mini.

Doe it support all the hardware out of the box including:

-WiFi card

-Full support for the touchpad including the ability to turn off tap-to-click?
