There is a huge amount of information on this site. There is a Kernel Programming Guide which introduces kernel programming. You will probably also need to look at the I/O Kit documentation (I/O Kit Fundamentals and I/O Kit Device Driver Design Guidelines). There is an excellent book about the internal workings of Macs and Mac OS X called "Mac OS X Internals: A System's Approach" by Amit Singh. This is a 1600+ page book and is not for the faint hearted. However, it does detail the internal workings of OS X in great detail. The author has a website (Mac OS X Internals: The Book) that contains a lot of information including example code.
