Same question from me. My first attempt went wrong, corrupt 10.5.7 dmg, so the mini won't boot at all, so I'm reinstalling from scratch.

Can I skip from 10.5.0 straight to 10.5.7 when do a complete fresh install ?

Preparing for the Upgrade
1. Download DellEFI 1.1 or DellEFI 1.2a5 (either one will work -- I personally prefer 1.2)
2. Extract the files onto a USB drive
3. Download the Combo Update"

Just a note that I was successful using the Delta Updater file, and did not need the combo updater (the delta is a lot smaller to download). All is working fine after this excellent how to. Thanks to all here for a great effort.

Seems to have gone well for me except I needed to -x -f in order to get it to get past a certain point in the boot process after installing the Combo Update.

Did I miss something... What are the advantages of 10.5.7 that will affect us Dell Mini 9 users? I don't see anything that pertains to us...

Yes you can just be sure it's the combo update, this has been tested and confirmed on a fresh install using DellEFI 1.1

Yes upgrade to 10.5.7 prior to running the last 2 steps of the install method. (Running dellEFI)
