What applications can I safely trash?

essentially any apps you don't use are safe to trash. back up your SSD and see how slim you can get it

you can safely trash almost anything, probably anything in the applications folder. i deleted itunes, front row, mail, directory, safari, a few others and havent had any trouble. you can also use "trimmit" to greatly reduce the size of many of those apps, sometimes to 10% of the original size.

on the other hand, i havent found that the processor or screen size reduce the functionality of any of the stock apps. really those factors are not a reason to delete anything. there are a couple places where you have to scale the window to see all of the buttons on a preference screen, but not very often.
