You're saying "no sign of installation" If you try to install again you get to pick the drive you want to install too. Look at how much free you have it should tell you if you have it installed. You're doing something wrong or maybe not mentioning something.
All I can say is:
Put the syslinux on the left, OS thumb drive on the right. Power on Mini, press 2 for Setup and verify USB Legacy Mode is enabled. Once you verify that go to the BOOT tab and highlight USB Storage and press F5/F6 to select to boot from USB. Press ESC. and Exit Saving Changes. Then before it boots up Press 0 for Boot Options and boot from USB Storage.
When it boots up try loading syslinux, when the prompt happens press Esc. and choose 80, Esc 80, Esc 80, and then Esc, 81. Let me know how that works.

When I go back into the install it does seem to have used up the space for the installation. And if I go into the "Startup Disk" menu it will let me choose the SSD with the installation on it as a startup disk (so it must recognise that OSX is on that drive).
Could the SSD be faulty? I've run the Dell Hardware Diagnostics and all tests pass OK.
I've tried everything. Ready to throw it out the window... or install Windows on it again...
