Why don't you create a disk image (using Disk Utility) of your current system disk, So you can revert back if things don't go well.
I was very pleased with the way 10.6.2 was running on my Mini 9. However, I've decided to try updating to 6.3. I took a disk image of the running 10.6.2
The update to 10.6.3 ran very smoothly. However, I've just discovered that my mini hangs after it wakes from sleeping. Not a big deal. But at this time I thought I'll revert back to 10.6.2, and I used the image to restore it successfully.

It was during a different method of implementation time (using syslinux and EFI I think), but you should be able to figure it out.
