One of two things fixed it.
One, it could be that I was not unchecking all of the optional stuff before install.
Two, it could be that I cut Windows out of the equation entirely. I had been avoiding making the USB drives with Tiger, since my 3.2GHz quad-core is probably a smidgen faster than the 400MHz of the G3. Hell, it did not even occur to me that I actually had a DVD drive in the G3 until a few days ago! So, instead of using the dd file in Windows, I did a straight copy of the SL DVD to my USB. I also used Tiger to make the NBI USB. It took overnight to get the big USB loaded, but it very well might have solved my problem.
