Simplest way without screwing with anything is to use Wubi and install via your Windows 7. You can easily do this and if you want to later delete it without having to worry about partitions and stuff.
I am typing this from Ubuntu Netbook Edition installed via XP on a dual boot OSX/XP machine that is now (of course) effectively triple boot. This link indicates Wubi is Windows 7 friendly.

What you about if you only have SL installed, is there a way to install Win7/XP or Linux after SL has been installed?
I've seen a few guides, but mostly in a different install order, just wondering if I may have to wipe the entire SL MAC partition or if anyone knows if other people have attempted to do it after having SL installed.

Actually, wrote about this in another thread the other day.
I had SL installed and then installed XP afterwards.
My method was to use the hacked Bootcamp available here. Replace your original Boot Camp assistant that is in utilities and use the new one to shrink your SL install and make a new partition for XP (or Win7).
You can then install from a CD if you have a bootable external drive or use one of the guides for making a USB install (e.g. WinSetupfromUSB - I used this) to your new partition.
It is pretty straightforward, but there are a couple of things to watch out for:
(a) Even though the boot camp works to format a new partition to FAT32, when doing the install I suggest you format again from the XP disk or your Win 7 disk to avoid any issues.
(b) When your Windows install has finished, it will mark the Windows set up as being the active partition and you will not be able to get into your OSX straightaway. To fix this, make sure you have handy a USB boot stick such as your original NBM DVD install stick, or a bootable clone of your SL install - as after installing Windows you will need it to get back into and fix your OSX partition to mark that one as active (google: fdisk make active partition terminal and you see it is quite easy).
I found this a good, easy way to get things done without having to worry about reinstalling SL.
For linux you can use exactly the same method......Or if you don't trust the Boot Camp hacked prog. you can use Disk Utility to shrink your Mac Partition.
As with all partitioning operations I'd advise backing up before hand and being patient. Never interrupt a partitioning operation.......
