This was a big surprise to me too; tons of apps in market have people complaining about lack of apps2sd support, when I have yet to use half the space on the internal storage.
From the sound of it, though, a lot of devices only have 512mb internally, and once you get an OS in there, there's not much space left. The 2gb in the Streak is comparatively HUGE.
Most applications are not terribly large; I look at people complaining about no apps2sd for a 200kb apk, and just laugh. The main use for the external SD card is media/data; mp3s, videos, eBooks, cached/offline map data, etc. The kind of thing that is regularly multiple megabytes. The biggest non-game apps I have are Adobe Flash 10.1 at 12.4mb, Dolphin HD at ~10mb, and RockPlayer at ~6.5mb. Quite a few of the built-in apps approach 5mb, Browser, Gmail, Quickoffice, etc. The games can get as big as 20-30mb, but only the really major ones.
