I have written a guide on the MDM Wiki (first page of the wiki actually), here.
I have used terminal which seems a bit complicated but I thought as paid apps aren't available everywhere yet, I can't seem to download RE with the 2.1 ROM :/
It would be great if someone could fill in some of the apk file names on the list and also the AT&T preloaded apps!

If your Streak is rooted and you have problems with Market, might help to clear Dalvik Cache. I had no trouble buying/downloading the vast majority of apps (including protected) on my unofficial 2.1 ROM.
There were only 3 I couldn't - Songstorm, Calendar Pad Pro, Cashbook - and eventually found out how I could buy them. I used Paul's (Modaco) simple method of editing build.prop and replacing the ro.fingerprint from the Dell to his recommended Nexus fingerprint. A day later, the world of Android apps was mine!
TB allows you to save the Market link for all user installed apps in case something goes awry and you have to wipe the Streak.
If you wish, I can point you to Paul's mod for the fingerprint in build.prop, once you download RE, you don't need terminal emulator.

Method works a treat BTW, I used Universal Androot (v1.6.1) and Titanium Backup (had v3.0.3 but updated it to v3.0.4) and works a treat!
I will say that if you use TB and cant get access to any of your apps, click Problems? and download the BusyBox and that should give you access to all your apps.
Just to highlight I removed
Amazon MP3 Store
On Dunhamzzz Wiki page its lists some others which I use, Im also assuming you can remove the rest of the Google apps (Mail, etc) but i use some of them.

I didn't perform a backup as I had no interest in EVER installing this crap again. I wonder if that was a bad idea.
