Go to 19/Aug - Streak 2.1 downloads / how-tos (ROM / Superboot / Recovery) - Android @ MoDaCo and download the Stock Recovery (build 4399). Extract the files somewhere on your PC. Make a copy of the 2.1 update file and call it Update.pkg. Put this onto the root of your SD card.
Just one thing which no-one ever seems to mention. When putting your device into Bootloader mode, chances are your PC won't recognise it. It will appear in Device Manager as Android 1.0, which isn't very helpful. Right click it and update the driver, selecting Let Me Choose From A List. Select Android Phone from the list that comes up, and then Android Bootloader. That will sort the problem.
Hope this helps mate (cheers again to Dun for pointing me in the right direction originally)

Update went fine, back restore went ok I think... :S But it wont let me add another gmail account?!?! Keeps saying I dont have a data connection connect to wifi even though the thing is connected to wifi???
Also, has anyone notices they have changed to sizes of the on screen widgets again? The power widget used to take up half the width of the screen in the 2.1 beta but now takes up 2 thirds? so you cannot get another widget next to it should have stuck to 2.1 beta....
