I agree with the "if it ain't broke. . . " philosophy - use mine for a work tool and don't need any flakey behavior. Originally installed 10.5.6 using DellEFI with great results - thanks to all the creative, smart individuals who've sorted through the software and hardware issues and produced this extremely useful body of work! You're really making a difference!
That said, I've installed all updates issued so far, first making sure that they produced no issues - I let them live in the wild for a couple of weeks and if nothing seems to pop up about them I go ahead and apply them, because a lot of them address security issues that could be important.
So far, my Mini 9 has remained rock-solid and has become my most useful computer, especially as I travel. I've had two versions of Ubuntu and two versions of XP (one nLited) on this thing previously, but OS X has really made the most of the hardware: as fast as Ubuntu, more polished and useful than XP.
I'd say apply updates after cautiously scouting forums (as you're doing) for untoward results. And continue to enjoy! I still get a kick starting this thing up and watching her fly.

I'm on Leopard, but I've applied every 10.5 update that's come along. So I'm on 10.5.8 and running the latest set of patches to that too. The only thing I held off on was iTunes 9 (although I've upgraded that recently).
I'll let the updates knock around for a while and watch the forums and then, if everything seems okay, I apply the updates. I also update my real Macs first, saving my Mini 9 until last. That way, if any problems arise I can see if they are general ones or specific to the Mini 9.
