For me, Spaces is really helpful on the tiny screen. I keep iTunes in one, Adium/Beak in another, iCal (sync'd with Google Calendar) in a third, and Firefox rolling in my main space. With 2GB, there seem to be no noticeable performance loss this way and I have instant access to 99% of the things I use my OS X Netbook for. Synergy, Growl and Dropbox in the menubar and pretty much all my bases are covered. Probably not minimalist, but works for me.
