Ummm... maybe I'm not understanding the question here, but, it sounds like you are not going to run xslimmer since it's causing you grief. You're going to do a another fresh install. You ask: "how do I fix this"?
Well, don't run xslimmer?
If you had built a clone of the disk before running xslimmer, maybe then you could have just reimaged.
I'm guessing you tested the machine before you ran xslimmer to see if things are running right? If they are/were, yeah, there's something about xslimmer or what you're slimming that's causing the grief.
Instead of xslimmer, maybe try monolingual and then follow some of the steps in the following link. Took my Mini to 6.1 GB disk usage, including installs for OpenOffice, Firefox, SuperDuper, Perian, Flip4Mac, VLC, Bean, others.
