First, let me tell you that you're at risk of getting a snippy reply from the SearchNazis, because lots of this stuff has been done to death.
Using an SDHC card for low-priority storage (the kinds of files you described) is pretty much well recommended by everyone. Once you put the SDHC in, your machine should mount it and make it available as a directory in the filesystem and probably as an icon on the desktop and in whatever Ubuntu calls its "my computer" logical collection of devices and services. You can just leave the card in there so that it'll always be mounted and available in the same place, and store anything you want on it.
It would be fairly slow to run applications off even the fastest SDHC cards, but it should be fine for docs, photos, music, etc. I'd generally recommend buying it online, you're likely to find better prices. Class 6 is the fastest. 16-gig SDHCs are for sale everywhere.
