Mine plays perfectly:
stock 8GB STEC
512 MB

I upgraded to 2GB so it might run better (probably not)

on osx,
i can play hulu fine but as noted early, there are times every 5 to 10 seconds where there is a slight freeze that is noticeable to some but not maybe to all.

btw, i used firefox. safari 3 had comparable performance. maybe safari 4 beta will fare better?
That is not necessarily true. There are many determining factors that can cause issues, not just hardware. Trust me I use Netflix, I can see frame drops in there no matter what system I am on. I have seen drops on Hulu on different systems due a number of reasons.

However so far on my Mini 9 I do not see many if at all during most playbacks.

The one thing I did change is I set my Flash usable storage to 1MB from 100K. Not so much for the movies, but for some testing I am doing on Flash apps.

And how do you do that?

Just checked an episode of Bones, seems to work fine in Firefox on Ubuntu 8.10 i386, 2gigs ram. This being embedded in the browser in the default view, standard def.
Full screen is a bit laggy.

Interesting... I get a few small drops up front but then it seems to smooth out. 480p is the same small frame drops then seems to smooth out. I was watching 30 Rock and Naruto...
I've got a stock mini (XP and 16gb STEC) except that added 2gb ram. I'm using my wireless connection with Fios 20/5.

Its odd that some people have it working so well while others have no luck at all... It makes me wonder if there is some crazy varience in the product or if certain runs have parts that are different standards... it just doesnt make sense.

On a similar note I saw people mention that they got quake live working on their systems but I cant even get the mouse to respond at more than .001 fps on the menu screen.

Full-screen Hulu ran silky smooth on my mini after I made firefox use ramdisk for cache. Right clicking on flash movie and lowering the quality can help performance as well.

I'm running my mini on Ubuntu/2gb ram/4gb ssd.

How do you make firefox do that?
Non fullscreen hulu is fine, but fullscreen is choppy.

hulu runs perfectly even at 480p full screen on my dell mini 9. I use Firefox 3.1. Try plugging your computer in and see if that makes a difference. This could make a difference depending on your power settings.
