I did this *exactly* and it has worked perfectly! One thing I might add is that when the 10.6.6 installer got to the step where it asked the user to hit the "reboot" button, I left that window and started up NBI, ran NBI (it seemed to take longer then the first time), and then quit NBI when it finished and went back to the open Installer window and hit its "reboot" button. So far, so good, Bluetooth, WiFi, and Sound all seem fine.

My initial update from 10.6.5 to 10.6.6 got borked. Got the no entry sign when booting. So I started from 10.6.0 and successfully updated to 10.6.6. Here are the steps for anyone is similar situation:
1) Install 10.6.0 from USB
2) Download and run NBI 20100616212351
3) Download and install 10.6.5 Combo Update
5) Run NBI 20100616212351
6) Download and install 10.6.6 Update
Everything should be working now.
Oddly enough, when I used Time Machine to restore my files, the system would bork. So this default updating worked and I guess I'll restore my Mini a piece at a time. As others have mentioned, keep a clone on hand. Would make things much easier. Here is link to Carbon Copy Cloner.

You are right. I could have been more detailed regarding the reboot message/window. Thanks for the feedback and glad it worked for you also.
I used Clonezilla ( http://clonezilla.org/downloads.php ) and backed up my 10.6.5 version of OS X to a usb external drive before upgrading. I have been bitten by the "kernel panic" issue one too many times. I say save yourself a headache, have a good verified backup before updating your OS X.

I had used the 10.6.6 Combo updater to update from 10.6.3 to 10.6.6. Everything worked except I had no sound. I then followed the above instructions and reinstalled 10.6.6 again from the delta updater (not combo) and sound now works. I left NBI open between the first and second run and, like it says above, didn't change any settings.
