I thought the Atom only had one core.

This confused me for a little while. The Atom is indeed single core but it has hyperthreading which is like virtual cores.

How can you enable hyperthreading on the AtomN280? .. or on OSX in general

It would be a BIOS option to disable it, if available. It's on by default and I don't think there is an option to disable it on the Minis.
